An apple a day keeps the doctor away! Apples are an excellent source of nutrients as they are rich in vitamins A, C, E, K, B1, B2, and B6. They are also great sources of manganese, fiber, potassium, antioxidants, and polyphenols. This means that apples are excellent for heart health, can lower the risk of diabetes, lower blood pressure, and are good for your bones. Apples also contain compounds that help to fight asthma!

Carrots are well-known for their nutritional value and are a great source of vitamins, minerals, and other plant compounds. Carrots may reduce the risk of cancer, lower cholesterol, and are good for eye health.

Yogurt is highly nutritious and is a great source of protein, B vitamins, and calcium. The nutrients found in yogurt are good for digestive, bone, and heart health, and work to strengthen the immune system. Yogurt also promotes healthy weight management.

Eggs are full of vitamins and nutrients that work to raise good cholesterol and lower the risk of heart disease and stroke. Eggs are also great for eye health!

Honey is rich in antioxidants and organic acids that can reduce the risk of heart attacks and stroke, lower blood pressure and triglycerides, and improve cholesterol. Honey is a better sweetener than sugar for diabetics and can also promote eye health.

Food produced locally is more nutritious. This is because food contains the most nutrients around the time it is harvested. The longer food spends traveling, the less nutrition it contains. Less time traveling also means less exposure to harmful chemicals and less production of greenhouse gasses. What a tasteful way to decrease our carbon footprint!

Sweet Carrot Bread with Rye Flour, Apples & Cinnamon

Ingredients

  • 3.5 oz. grated carrot

  • 3.5 oz. applesauce

  • 1 tbsp. Skyr similar to Greek yogurt

  • 2 eggs

  • 2 tbsp. blossom honey

  • 1.8 oz. coconut oil melted

  • 5.3 oz. rye flour

  • 1 tsp. cinnamon

  • 1 tsp. baking powder

  • Almond butter

Instructions

  1. Preheat oven to 350 °F

  2. Cut the carrots coarsely and put in a food processor and grate fine. Remove and put into a bowl. Add apple sauce, curds, honey and eggs. Melt the coconut oil and let it cool a little. Pour the coconut oil in the carrot mixture.

  3. In another bowl, combine the dry ingredients, rye flour, cinnamon and baking powder, mix well. Add to the carrot mixture. Pour batter into a greased bread pan and bake the bread for approx. 40-45 minutes. Let carrot bread cool completely before slicing. Serve with almond butter or butter to taste.
